Zucchini Crust Pizza!

Zucchini Crust Pizza!

If you love pizza as much as I do, but you are learning how to eat clean and change your bad habits into better ones, look no further!

This Zucchini Crust recipe will  take Pizza night to a WHOLE NEW LEVEL!  Even more two boys (7 and 5!) LOVED it! So give it a shot, and let me know what you think!

TIP- I recommend using a Pizza Stone… makes for crunchier crust and easier clean up!

Zucchini Crust
8 cups shredded zucchini (Equals 3-4 medium Zucchinis)
1 cup shredded cheddar cheese
2/3 cup flour (sub almond flour)
2 cloves garlic, pressed or minced
3 tsp dried oregano
1 tsp basil
2 eggs, beaten
1/2 tsp salt

1) Preheat oven to 550F with a pizza stone pre baking in it.

2) In a large bowl, toss the zucchini with 1 teaspoon coarse salt and set aside for 15 minutes.

3) Squeeze the excess moisture out of the squash by wrapping it up in a clean tea towel or piece of cheese cloth and wringing it out, discarding the water. If you do not have either, use a colander and press firmly with paper towel, draining the moisture (note: this works, but just takes a little longer.)

4) Once all of the excess moisture has been wrung out, place the shredded zucchini back into the bowl and add the cheddar cheese, flour, garlic, oregano, basil, eggs, and salt.

5) With your hands, combine all of the ingredients together. Place the zucchini mixture onto a piece of parchment paper at least 15” in diameter, set on something solid (large cutting board works) that will make it easy to transfer into the oven.

6) Using your fingers, spread the zucchini crust mixture to form a circle about 14” in diameter, 1/2″ thick. Pinch the edges up so that it forms a nice crust.
Once the pizza crust has been shaped, transfer the crust on the parchment paper onto the heated pizza stone in the oven. Bake for 8 minutes or until the crust starts to brown.

7) After 8 minutes, transfer the pizza (still on the parchment paper) out of the oven, onto the solid surface you used before (i.e. cutting board). Top the pizza with sauce and any additional toppings that you’d like. Once the toppings are on, transfer the pizza (again, still on the parchment paper) back onto the heated pizza stone in the oven and bake for an additional 4 minutes.

Remove, let cool for 2 mins, slice and devour!

Say Goodbye to who you think you SHOULD be, and be who you WANT to be!

Hey there!

Welcome!  Here at Living Fit On Purpose you will find answers to all your fitness needs: recipes, program suggestions, success stories, meal planning tools, clean eating guides, how to fit fitness into your busy life, how to handle picky eaters, nutrition tips, coaching business opportunity, and more!

I am a recent member of the 30 club, have two children, and am happily married for almost 10 years to an amazing man who you will meet also as we share our life and fitness journey with you! Our story was not easy, and it took a ton of sacrifice, but our road to where we are at today has been worth every single struggle financially, emotionally, and physically.

In February 2015, I woke up one day, at the heaviest I have ever been– heavier than during both pregnancies!) and just had a moment of ENOUGH IS ENOUGH! I was done feeling lazy, out of breath, exhausted, grumpy, HUNGRY, bloated, overweight, unattractive, and like I was a disappointment to my boys and my husband. He never lost his love for me because of my weight, but he (and I) deserved the lively, confident girl he had married).

I laid there at 5 am as I heard my 6 and 4 year old waking up for their day, and I just started to cry.  What was I going to do?  They deserved a happy mom. I had been a runner and lost 45lbs doing it, but it also took ALL of my womanly curves with it and I gained all the weight back when I stopped running as much, because I didn’t know how to eat properly. I had tried 3 different gyms, and I had tried every fad diet there was. Nothing excited me enough to stick with it, so I never saw results.

Later that day, I was sitting on the couch while both kids were at school, and I was scrolling Facebook (because I was exhausted and had no motivation to do the 100 things on my to-do list that day), and a post popped up from a woman’s page I had been following for 3 years on social media. She had just had a baby two months prior, and her post was a picture of her results from a program called 21 Day Fix.  At that exact moment, SOMETHING CLICKED!

I don’t know what it was, but after years of following her journey and her inviting me to challenge groups (and me saying no thank you or making excuses why I couldn’t), I just had a gut feeling that this was my sign, my chance to finally change the path I was on.  I sent her a message and said tell me more about this program and how I can get it.  I signed up for a Challenge Pack and joined her team so I could get a 25% discount. (Hey, I needed to change, but I am not going to turn down free savings… that is just silly!).

About a week later, my package came, and I jumped right into it.  Within days, I could not believe how much energy I had, how much better I was sleeping, and that I hadn’t derailed from the food plan a single time!  That gave me the confidence I needed to keep going… and then before I knew it, 21 days was up and I had lost 13lbs and 16″ and I was feeling ALIVE again! My confidence was roaring back and because I was sharing my journey on social media, I had started to motivate and inspire others to also do the program.  We became this group that wanted more for our lives and were getting it by working together, sharing meals, tips, advice, love, support, and accountability!

My life has changed SO much since that day.  I went from being a stay at home mom who felt guilty 95% of the time that her husband had to foot the bills to a work from home Mom who gets to raise her boys, get in shape (and get paid for it!), and who gets to bring positivity and healthy habits into her family to create a better future. And now I get to give that same opportunity to ANYONE who wants the same thing for their life!  How freaking awesome is that?!

Looking forward to getting to know you, and helping you find what you’re looking for!
